Chicken & Waffles with Homemade Peach Syrup

Ingredients
  

Pan Fried Boneless Skinless Chicken Breasts

  • 6 Thin Cut Boneless Skinless Chicken Breasts
  • 2 eggs beaten
  • 1/4 Cup milk
  • 2 Cups All Purpose Flour
  • 1/8-1/4 Cup Kinder's Brand Bourbon Peach Rub to taste
  • 1/4 tsp black pepper
  • 1 tsp salt
  • 1 tsp Slap ya Mama Seasoning
  • Vegetable Oil, enough to cover the bottom of the skillet by 2 inches.

Buttermilk Marinade for Chicken

  • 1.5 Cups Buttermilk
  • 1 Tbsp Frank's Red Hot Sauce
  • 2 tsp salt
  • 2 eggs beaten

Peach Syrup

  • 1 29 oz Canned Peaches in juice
  • 1/2 stick butter
  • 1/2 Cup Brown Sugar
  • 1 tsp vanilla extract
  • 2 Tbsp Pure Maple Syrup
  • 1/4 tsp Cinnamon

Instructions
 

Buttermilk Marinade

  • Mix together buttermilk, beaten egg, hot sauce, and salt in a large ziploc bag. Add chicken to marinade. Massage the chicken in the bag of marinade well. Marinate in the refrigerator 8 hours or overnight.

Peach Syrup

  • Melt butter and brown sugar in medium saucepan until sugar has dissolved, stirring frequently. Add peaches with juice, and mix well, breaking up the peaches a bit as you stir. Add in maple syrup, and stir until the mixture just starts to thicken (it will not get super thick). Remove from heat and add vanilla and cinnamon. Serve hot over waffles and chicken.

Fried Chicken

  • Heat oil in skillet to 325 degrees. Whisk together in a bowl: the flour, Kinder's, salt, pepper, and Slap Ya Mama. In a smaller bowl, whisk together 2 eggs and milk.
  • Remove chicken from bag, discard marinade.
  • Once oil is ready, coat chicken breasts in flour, then in egg/milk wash, back into flour, then into the skillet. You will not want to over crowd the skillet, so you may need to do this in separate batches. Fry for approx 10-15 minutes (depending on chicken breast thickness, less time for really thin, little longer for thicker breasts, temp should read 165 degrees in the thickest part). Flip chicken halfway through. Transfer chicken to wire rack.
  • Serve chicken on top of your favorite waffle. (I just used Krusteaz Waffle Mix and added malted milk powder to get the malt flavor). Top waffle with butter, and pour syrup over chicken and waffle. Enjoy!
