Chicken & Fluffy Bisquick Dumplings

Ingredients
  

  • 1 whole chicken
  • 2 qts (approx) water
  • 3 bay leaves
  • 1/2 medium yellow onion diced
  • 2 stalks celery diced
  • 1 carrot peeled and diced
  • 4-6 Tbsp (to taste) Chicken Broth Soup Base I used Orrington Farms
  • Salt & Pepper to taste

Dumplings

  • 2 Cups Bisquick baking mix
  • 2/3 Cups milk

Instructions
 

  • Fill large pot with approx 2 qts water. Remove the extra chicken pieces that may be inside the chicken. Rinse chicken. Add chicken to the pot of water along with the carrot, celery, onion, and bay leaves. Boil until chicken is done.
  • Remove chicken from pot to a collander to cool off (or run cold water over it). Remove bay leaves from water and discard bay leaves. *Save the water- this is your broth. You may add water or chicken broth if more liquid is needed*. Debone the chicken and add the meat back to the pot, along with the chicken soup base, salt, and pepper. Bring back to a boil.
  • Mix the Bisquick and milk. Once broth is back to a boil, drop by tablespoon fulls into hot boiling broth. Cook uncovered for 10 minutes. Then cover, and cook an additional 10 minutes.
